Amaretto Peach Sorbet

Amaretto Peach Sorbet
Good morning from Georgia. I'm in beautiful Savannah this morning and since I am in the Peach State what better recipe to feature than this beautiful, fresh and flavorful sorbet. Fresh, ripe, juicy peaches are essential for this recipe; it really is one to make with the best of the season's fruit while it is at it's absolute peak. It's not hard to find a roadside stand in this area with plenty for sale but even back home in Canada right now, some beautiful Niagara region peaches will certainly fit the bill nicely.

I do not bother to peal the peaches for the puree that forms the basis of this dessert, instead I just wash the peaches, leaving the skins to add color to the sorbet. Amaretto is a fantastic flavor complement to stone fruits like apricots, nectarines and most certainly peaches. Since a sorbet need a little alcohol to keep it from freezing solid, I thought why not use one that adds a little extra flavor to the party. The result was perfect. This would make a wonderful dessert at a special summer dinner or even a fancy dinner party.
  • 2 pounds fresh, very ripe peaches
  • 1 1/2 cups sugar
  • 1/2 cup water
  • 2 tsp pure vanilla extract
  • 3 ounces Amaretto liqueur
  • 1 egg white, lightly whisked
Begin by bringing the sugar and water to a slow simmer for about 5 minutes. Allow the syrup to cool completely.

Wash and pit the peaches leaving the skins on and puree them in a food processor or blender until very smooth. Add the cooled sugar syrup, Amaretto and vanilla; cover and chill until very cold before pouring into an ice-cream maker and letting it turn for 15-20 minutes until it freezes to a thick slushy consistency. In the last few minutes in the ice cream maker add the egg white. Transfer to an airtight container and keep in the freezer to harden until ready to serve. You may find that you need to take it out of the freezer for 10 minutes or so to scoop it before serving if your freezer is very cold.

We have an entire category of cocktails that we call sippin' drinks. They are mostly comprised of cocktails that contain bourbon, cognac, and whiskey. I think of sittin' on the porch swing on a warm summer night sippin' on cocktail. That's a 'sippin' cocktail'!

Strawberry Shortcake Martini



Happy Independence Day! I can't believe its July already. Wasn't Memorial Day just a few weeks ago??? hahaha (apparently not)

It is so good to be home and celebrating the 4th of July here in Phoenix with my family. Our plans are to grill up some burgers and watch fireworks. Many will be celebrating this weekend and I am sure you will be looking for the perfect cocktail.

Apricot Amaretto Cheesecake Bars
Apricot Amaretto Cheesecake Bars

Here's a recipe I developed to indulge two of my great loves, apricot and cheesecake...oh and let's not forget Amaretto! In this recipe, the sweet dried apricots soak up the Amaretto overnight before being added to the cheesecake batter. Apricot and Amaretto is a fantastic flavor combination and they come together so deliciously in these incredible cheesecake bars.

In an airtight container combine:

4 ounces Amaretto liqueur
3/4 cup dried chopped apricots

Let the apricots soak in the Amaretto for 24-48 hours. Almost all the liqueur should be soaked up by the dried apricots but if just a little syrupy Amaretto is remaining, it's okay to add to the cheesecake mixture as well.
 
Cookie Base 
 
In a food processor pulse together until crumbly (or simply cut the butter through the flour and sugar with a pastry knife or two butter knives held between your fingers)
 
1 cup flour
1/4 cup packed brown sugar
1/3 cup cold butter
 
Save a 1/2 cup of this crumble mixture to sprinkle over the top later. Press the rest of the crumble mixture into the bottom of a greased or parchment lined 9x9 inch square baking pan. 
Bake at 350 degrees F for 15 minutes. Remove from oven and let cool for a few minutes while preparing the cheesecake filling. 
 
Cheesecake Filling
Beat together until smooth and fluffy

1 cup cream cheese (8 oz or 250 grams by weight)
3 tsp vanilla extract
1 tbsp lemon juice
1/4 cup white sugar
1 large egg
 
Fold in the soaked apricots.

Spread the cheesecake mixture evenly onto the pre-baked cookie base and sprinkle the reserved cookie crumble over the surface; bake at 325 degrees F for 20 minutes. Let cool completely in the pan before cutting and serving. Refrigerate to store.

Sugar cookies are the most popular cookie around these parts (in my life). That is the one cookie that I am known for and it is HIGHLY requested every year. "What can I bring to Christmas?" "Your star cookies!!!". Well, last year I was so busy with commitments that I did not make any for Christmas. You would have thought I had brought coal for everyone when they realized there were no cookies. I am pretty sure that if that happens again this year I will be kicked out.

Hey Slow Roasters, It's Ladies Night! This week we continue with our dessert cocktails for Ladies Night. The Lemon Cream Pie Martini was such a huge hit that we decided to try another favorite. Now, as I mentioned last week I may have a little love affair with cake going on. Chad says my favorite cake is... One that has cake in the name, or looks like a cake, or tastes like a cake. If it resembles cake in anyway... I love it!!!

Strawberry ShortCAKE Martini. It meets all the requirements. But, seriously this is a dessert cocktail that you will fall in love with. The appearance of the vibrant red Martini will draw you near and the divine aroma will have your mouth watering. As the first sip crosses your lips you will notice a perfectly sweet strawberry flavor, followed by a rich cake flavor and a fabulous creamy end note.

After working many hours in the cocktail lab, our mixologist and cocktail artist Chad has developed the most delicious martini I have ever had. As a matter of fact we had a disagreement over who got to drink the last cocktail from the photo shoot, we enjoyed it that much. I know you will love it too!!!

It is no surprise (I am sure) that I love lemon cream pie. I say it is no surprise because I have a bit of a lemon love affair going on. I also have a bit of a cake love affair, but that is a story for another day.

Sometimes the classics are all you need. After weeks of creating holiday drinks; that entailed everything from infusing jalapenos in tequila to making peanut butter cocktails, we here at The Slow Roasted Italian needed to cleanse our palates and get back to simple. We decided a delicious classic sippin' drink was just right.

Chad and I love everything amaretto. He loves amaretto cake, amaretto icing, amaretto ice cream, and especially DiSaronno Amaretto. So when he found this recipe it was a no brainer. 2 simple ingredients, 1 delicious taste! It doesn't get better than that!

So, Slow Roasters, go to your kitchen grab your amaretto and your lemon juice and prepare for the splendor that is the Classic Amaretto Sour.
