Oven Baked Southern Fried Chicken Wings with Orange Honey Drizzle

The inspiration for these tantalizing wings comes from a habit of drizzling honey on take out fried chicken. When it comes to fried chicken the Colonel is not king here in Newfoundland, we are reigned by Queen Mary. Mary Brown's fried chicken is a franchise that started here and is now expanding across the country. The seasoning on their product is much lighter than many other fried chicken chains and even as a kid I enjoyed it a drizzle of golden honey to compliment the crunchy, succulent pieces.

As the number of recipes for them on this website will attest, I do love some great wings and when trying to come up with a way to pay homage to orange chicken in wing form, I thought of my love for honey on fried chicken. Why not infuse the honey with the orange and impart the flavor that way? Some friends were dropping by for sips and nibbles so I got my chance to try it out.

The result was fantastic! All the flavors worked together so well and once again only empty platters remained. I recommend drizzling the platter as you serve it to your guests and leaving a little ug or gravy boat of the citrus infused honey on the side for those who'd like more. You'll have them salivating before they take the first bite.

These wings as pictured, were oven baked but if you prefer to deep fry them that's perfectly fine. I'd give them about 20 minutes at 350 degrees F, depending on the size of the wings you're using.

Crispy, oven baked Southern fried wings drizzled with orange infused honey.
Prep time: Aproximately 20 minutes
Cook time: 40 minutes
Total time: 1 hour
Yield: 3 - 4 pounds wings
Ingredients
  • 3 cups flour
  • 1 tbsp salt (plus more to season wings)
  • 1 tbsp freshly ground black pepper
  • 2 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp dried thyme
  • 1 tbsp ground sage
  • 1 tbsp dried oregano
  • 1 tbsp dry mustard powder
  • 1 tbsp powdered ginger
  • 1 tbsp paprika
  • 1 tbsp cayenne pepper
  • 3 - 4 lbs chicken wings
  • 3 eggs
  • 3 tbsp water
  • 3 tbsp canola oil
  • 1 cup honey
  • zest of 1/2 large orange, finely grated
Cooking Directions
  1. Preheat oven to 375 degrees F.
  2. Mix the flour with the salt, pepper and all of the herbs and spices
  3. Coat the bottom of a cookie sheet or large baking pan with the canola oil.
  4. Whisk together the eggs and water to make an egg wash.
  5. Season the wings with salt.
  6. One at a time, dip the chicken wings in the flour and herb/spice mix, then quickly into the egg wash and back into the flour dredge again.
  7. Place the coated chicken wings in the pan and lightly spray the tops with canola oil from a spray bottle.
  8. Bake for about 40 minutes or until fully cooked, golden brown and crispy, turning at least once during the cooking time.
  9. Add the honey and orange zest to a small saucepan.
  10. Bring to a gentle simmer for only a minute then remove from the heat.
  11. Drizzle the wings with the orange honey when serving.

You may have noticed that I have a real love of peaches. There are quite a number of fantastic peach desserts on this website but one of my favorite salsas is also made from one of summer's perfect fruits. The ingredients here all work together extremely well from the fresh grated ginger to the sweet, spicy sriracha sauce, they all meld together particularly well.

We use this salsa on its own with some multi-grain baked tortilla chips for a healthy snack or great party food addition. It also goes wonderfully well with grilled fish, pork chops and as the photo below shows on barbequed chicken. We used our delicious Blueberry Barbeque Sauce on this occasion, which was a particularly good flavor combination.

  • 6 peaches, washed and diced small, skins on
  • 1 tbsp grated fresh ginger root
  • 1 garlic clove minced
  • 1/2 small red pepper diced small
  • 1/2 red onion, diced small
  • 3 tbsp chopped fresh basil
  • 1/4 to 1/2 tsp ground cumin
  • 2 tbsp sriracha sauce (or other sweet chili pr hot sauce; more or less to taste)
  • salt and pepper to season
  • 1 tbsp lemon juice

Toss all ingredients together well and let stand for at least a half hour stirring occasionally before serving.

A Wicked Wing Weekend!


Many of our friends and family, like so many of you, just love great chicken wings.  A great idea for holiday entertaining, a special occasion a just a weekend party
with drinks and friends, is to plan a dedicated wing night. Serve several of your favorite wing recipes throughout the evening and believe me, you will have some very appreciative guests! Here's some of the great wings we love to serve our family and friends.

Smoky Sweet Spiced Almonds

Smoky Sweet Spiced Almonds

I was first introduced to these terrific snacking nuts when my work colleague, Elizabeth brought them to share at an office get together. I loved them immediately and from chatting with her discovered it was a very adaptable recipe, that can use other nuts, a combination of nuts, and whatever spice combinations you think would work.

With the holiday season right around the corner, here's the perfect pre-dinner nibble for Thanksgiving or to serve with drinks any time. These are fantastic when served warm from the oven; a little sweet, a little salty, a little smokey from the spices chosen and with just a touch of spicy heat. You may find yourself making these all year round.

2 cups whole raw almonds

Place the almonds on a parchment paper lined cookie sheet and bake at 350 degrees F for 5 minutes. Toss the around and bake for another 5 minutes.

Let them cool as you mix together in a medium sized bowl:

1 tbsp melted butter
3 tbsp brown sugar
1/2 teaspoon ground cinnamon
3/4 teaspoon chile powder


1/2 tsp cayenne pepper
1 tsp smoked paprika
1/2 tsp chipotle powder
1 1/2 tbsp maple syrup
1 tsp kosher salt

Toss the warm nuts in the mixture until evenly coated, then roast on a parchment lined baking sheet for 12-18 minutes depending on the size of the nuts to get them perfectly toasted.

Watch them carefully and toss them around several time during the baking times to make sure they are staying separate and not clumping together.Allow them to cool on the pan for at least 10 minutes before serving. Continue to toss them severa; times as they cool to keep the nuts separated.

When completely cool, these can be stored in an airtight container for up to a weeek or so.
