Lunch and breakfast are often the hardest meals to eat without busting your Paleo, gluten-free diet, especially when most recipes call for gluten, processed oils, sliced bread or sandwich buns.
Diana Rodgers, a nutritional therapist and Paleo community activist, solves the problem with 100 easy and delicious packable meals without bread. From lettuce-wrap sandwiches to egg muffins to creative uses for toothpicks and packaging, she takes the confusion out of how to make hand-friendly and fast Paleo meals. Recipes include her Chicken Salad with Fennel and Cranberries perfectly cradled by a leaf of romaine lettuce, the to-die for Cherry Tarragon Breakfast Sausages and even a Paleo-friendly Bubble and Squeak. These mouth-watering creations are perfect portable meals that are as healthy and easy to make as they are gourmet. (-synopsis)
While I don't follow a Paleo diet, I have several friends who do. Plus, I like looking to Paleo recipes whenever I'm trying to cut back on my gluten. This cookbook has a great selection of quick and easy lunches and breakfasts. From chapters such as Grab-and-Go Paleo Wrap to Busy Morning Breakfasts, there are recipes for everyone!
The introduction of the book talks about eating Paleo. It talks about the rules, tips on what to eat at home, and ideas on what to eat. There's even a section on what to eat when dining out! It's a great reference.
Included in the book are some fabulous lunches such as Avocado, Orange, and Herb Chicken Wraps, Cajun Po' Boy Wraps, and Asian Chicken "Noodle" Bowls. For breakfast I'm looking forward to trying the Herbed Omelet with Truffle Butter, Tortilla Espanola with Chorizo, and the Blueberry Cinnamon Coconut Smoothie.
The recipes are simple to follow and the pictures are big and beautiful. I can't wait to get started on making some of these delicious dishes!
I give this book 4 out of 5 stars.
