Strawberry Custard Angel Food Shortcake
Strawberry Custard Angel Food Shortcake
My daughter just finished junior high and partly because our kids have done all their schooling in French since kindergarten, she is off to Quebec for an educational and cultural exchange program for three weeks. I'm sure those of you with kids who are sending them off on their own for the first time know what that's like. I know this will be a valuable experience for her, I just hope it goes quickly. We're missing her terribly already.

Her best friend Kathryn's birthday is later this week and because Liv was going to miss it, we threw a little pre-birthday celebration barbeque this weekend. I started throwing out different and sometimes elaborate birthday cake ideas but Liv said, "Dad, can we just keep it simple; just something like a strawberry shortcake." So with those instructions in mind and suspecting that with the birthday girl's English family roots would have her loving anything with custard, I added some of my favorite old-fashioned vanilla custard as well. I also substituted homemade angel food cake as the base and the whole thing made for a luscious but not too heavy end to a delicious meal.

Vanilla Custard

Scald in the microwave or on the stove top:
  • 1 1/2 cups whole milk
  • 1 vanilla bean, split lengthwise and with the seeds scraped out
You can leave the pod in the milk while it is scalding to extract extra flavor and remove it before adding the milk to the flour mixture. Microwave works best as there is no chance of burning the milk.
NOTE: You can use a good quality pure vanilla extract instead of the vanilla bean but you must add it at the end of the recipe along with the butter.

Meanwhile, in a saucepan combine:
  • 3 tbsp all purpose flour
  • 1/3 cup sugar
  • pinch of salt
Over medium low flame slowly add 1 cup of the scalded milk, whisking constantly. As you notice the filling beginning to thicken, the rest of the scalded milk continuing to stir constantly until it begins to thicken again.  At this point remove from heat and pour about a half cup of this mixture onto
  • 2 slightly beaten extra large egg yolks
whisking constantly. Pour the egg mixture immediately back into the pot, continuing to constantly stir. Cook for an additional two or three until the filling reaches pudding consistency and remove from the flame. The mixture should just be beginning to boil at this point.

Stir in:
  • 2 tbsp butter
  • 2 tsp vanilla extract (if you did not use a vanilla bean earlier)
Pour into a bowl and lay a sheet of plastic wrap over the surface to prevent a skin from forming on the surface.

Angel Food Cake

Preheat oven to 350 degrees F. Line the bottom of a 9 or 10 inch spring form pan with parchment paper but do not grease the sides or bottom.

Sift together twice:

2/3 cups icing sugar (powdered sugar)
1/3 cup all purpose flour
1/3 cup cake flour

Beat to soft peaks:

6 egg whites
small pinch salt
2 tsp vanilla extract
3/4 tsp cream of tartar

Gradually add, a couple of tablespoons at a time:
  • 1/2 cup sugar
Sift the dry ingredients over the beaten egg whites in four equal portions, folding very gently after each addition. A light touch is what is important here. Fold as gently as possible and only until the dry ingredients are just incorporated.

Transfer the batter to the prepared pan.

Bake at 350 degrees for about 25 minutes or until the cake springs back to the touch at the center.

Angel-food cake needs to be cooled in the pan upside down, so invert the pan onto a wire rack until completely cool. This step is important so that the cake does not fall after baking.

When completely cooled, run a sharp knife around the outer edge, release the pan lock and gently shake the cake out of the pan onto a serving plate. Remove the parchment paper.

Vanilla Whipped Cream
  • 1 cup whipping cream
  • 1 tsp vanilla extract
  • 3 tbsp icing sugar (powdered sugar)
Combine and beat to firm peaks
  • 1 pound fresh strawberries, sliced
You can use the strawberries just as they are or sprinkle with 3-4 tbsp sugar and toss well. Let sit for a half hour to an hour, tossing occasionally to extract some of the juice from the berries which then forms a syrup to pour over the cake or over the strawberries on top of the cake, as pictured.

To construct the cake, spread the custard evenly over the angel food cake to about an inch from the edge. Top with the strawberries and whipped cream. Chill before serving.

Pina Colada Cake

When I first tasted the intense pineapple flavor in our experimental Roasted Pineapple Jam, I just knew that I would have to incorporate it into a great dessert cake. A pina colada cake first leapt to mind and it worked out very well indeed. I took a really great vanilla cake recipe, soaked in a little dark rum, filled a couple of the layers with the roasted pineapple jam and covered the whole thing in a thick layer of coconut marshmallow frosting and garnished with a final sprinkle of toasted coconut. This is an awesome celebration cake for those who love sweet, tropical, pineapple flavor but I'll bet the coconut lovers will go wild for this one too.
You will first need to make some of our incredible Roasted Pineapple Jam.


For the vanilla cake:

Sift together and set aside:
  • 1 1/2 cups cake and pastry flour
  • 1 1/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt

For this recipe it is very important to be sure to sift the flour very well before measuring. Flour that is too compacted can cause a denser, heavier cake. If you do not have a flour sifter, put some flour in a bowl and whisk it for a minute before spooning the flour into the measuring cup to measure. Do this for both types of flour in the recipe.

Cream together until fluffy:
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
Add, one at a time, beating well after every addition;
  • 4 eggs at room temperature
Beat in:
  • 4 teaspoons vanilla extract
Gently fold in the dry ingredients in three equal portions, alternately with
  • 1 cup undiluted evaporated milk
When adding dry and wet ingredients alternately in any baking recipe, always begin and end with the dry ingredients.
Pour batter evenly into 2 well greased and floured 9 inch cake pans. Bake in a 325 degree F oven for about 35-40 minutes or until a toothpick inserted in the center comes out clean. Watch it carefully, you will not want to over bake this cake, as soon as the toothpick comes out clean, remove the cake from the oven and let it rest in the pans for 5 minutes before turning it out onto a wire rack to cool completely.

Coconut Marshmallow Frosting

  • 4 egg whites
  • ¼ tsp cream of tarter
  • 2 tsp vanilla extract
  • 1 1/4 cups sugar
  • ½ cup corn syrup
  • 1/4 cup water
  • 1 cup dried unsweetened shredded coconut
In a small saucepan combine sugar, corn syrup and water. Bring to a boil over medium heat and continue to cook until the mixture reaches 240 degrees F on a candy thermometer or when a teaspoonful of the mixture dropped into ice water forms a soft ball that holds its shape when cool.

Whip the egg whites, cream of tartar and vanilla extract to soft peaks in a large bowl. With the mixer on medium high speed, slowly begin to pour the sugar syrup down the side of the egg white bowl in a thin continuous stream. Continue to whip the frosting until it forms stiff peaks. Finally fold the coconut in by hand.

To construct the cake you will also need:
  • 2 cups roasted pineapple jam ( Find that recipe here.)
  • 4 ounces dark rum
  • 1/2 cup toasted coconut
Split the 2 layers of cake into 4 by cutting them in half horizontally. Each layer will get sprinkled with an ounce of the rum. Sprinkle the first layer with an ounce of the rum then spread with 1 cup of the pineapple jam, add the next cake layer, sprinkle with an ounce of rum and spread with some of the coconut frosting. Add the next layer of cake, sprinkle with another ounce of rum and spread with the other cup of pineapple jam. Add the final layer of cake, sprinkle it with with the last of the rum and then frost the top and sides with the remaining coconut frosting. Sprinkle the toasted coconut on the top and sides to garnish.

Spouse's birthday was yesterday, or as I like to refer to it, the anniversary of her 39th birthday. She is a big fan of a classic sponge cake so I knew that would be the base of the cake. She also loves strawberry shortcake and under the pink frosting this is very much like that classic dessert with the added luscious richness of mascarpone cheese added to the whipped cream filling.

The easy decorators buttercream uses all butter in the frosting and uses no artificial color to achieve the bright pink frosting. Instead a little strawberry puree is all that is needed to bring both flavor and color to the icing. The end result turned out beautifully delicious and would make a perfect celebration cake for kids or adults alike.



Strawberry Mascarpone Cream Cake

Sponge Cake




Sift together and set aside:
1 cup flour
1 tsp baking powder
For the meringue base of the batter you will need:

6 eggs separated, room temperature
1/4 tsp cream of tarter
1 cup sugar, separated in 2 half cups
2 tsp vanilla extract
1/2 tsp lemon flavoring (optional)

Beat egg whites and cream of tarter until foamy. Add ½ cup sugar gradually until egg whites are stiff.

Beat egg yolks and ½ cup sugar until foamy and thickened.

Fold beaten egg yolks into the beaten egg whites along with the vanilla (and lemon) for only a few turns before slowly and gradually folding in the flour and baking powder mixture very gently BY HAND using a rubber spatula until just incorporated into the meringue mixture. I mix in the dry ingredients in 3 equal portions. Do not over mix, you just want the flour to be incorporated; over mixing will deflate the egg whites and result in a tough textured final product.

Pour into ungreased 8 or 9 inch round cake pans with the bottoms lined with parchment paper and bake at 325 degrees F for 25-30 minutes or until center springs back when touched. Cool completely in the pans before running a sharp knife around the edge to release the cakes from the pans and then remove the parchment paper from the bottoms. You can also bake this cake in a 9 inch spring form pan and slice it in half horizontally after it is completely cooled.

Filling

Whip together to firm peaks:

1 cup whipping cream
3 tbsp icing sugar (powdered sugar)
1 tsp pure vanilla extract

Quickly beat in until smooth:

1/2 cup mascarpone cheese

Finally fold in:

1 1/2 cups quartered fresh strawberries

Strawberry Buttercream Frosting

For the strawberry puree begin by tossing together:

3/4 cup sliced fresh ripe strawberries
4 tbsp white sugar

Cover and set aside for at least an hour. This step helps to remove some of the moisture from the strawberries and intensify the color. Drain the strawberries but reserve the syrup. Puree the strawberries until smooth.

Blend together:

8 cups icing sugar (powdered sugar)
2 cups butter

When the mixture becomes sort of crumbly and the butter is broken up add the strawberry puree along with



1 tsp pure vanilla extract

The frosting will be very stiff at this point so slowly add some of the reserved strawberry syrup , a tablespoon at a time and beating well until the frosting reaches a firm but spreadable consistency. Any leftover syrup can be brushed onto the cake layers before assembling the cake.

Fill the two cake layers with the cream and strawberries then frost with the strawberry buttercream.
