Baked Rotini with Tomatillo Tomato Sauce + a review of Kitchen-Aid 5 Speed Hand Blender

I am a chronic list maker.  It's a fact.  I have two lists on my refrigerator.  One is a running list of things we need at the market and the other is a list of menu planning ideas.  Next to me on the couch sit numerous lists.  I have a list for blog posts I need to write, photos I need to edit, cookbooks I need to review, and usually a list of things to do for the week.

Kitchen-Aid 5 speed hand blender

It doesn't just stop at home either.  I have sticky note pads all over my classroom at work.  I keep two beside my computer.  One is for keeping track of IEP's and MA forms and the other is for jotting down notes from e-mails.  On my desk I have two more sticky pads.  One is for tagging things for my assistant to do and the other is for personal notes.  In other words, I have a lot of lists.  I also try to keep a running list of items I'd like for cooking and baking but I've gotten almost everything on that list.   My favorite items I've gotten are my Kitchen-Aid Mixer (isn't it beautiful!?) and my pasta attachments for the mixer.  My amazing husband bought me the mixer years ago and my parents bought me the pasta attachments for Christmas this past year.

However, there has been one item on my list for several years that never seems to appear and I never seem to buy myself.  It isn't that I haven't tried to buy it, I just haven't found the one I want.  So imagine my surprise when I arrived home from school only to find a package from Kitchen-Aid on my porch.  When I looked to see what it was I squealed so loudly my husband thought something was wrong!  On my porch was this gorgeous Kitchen-Aid 5-Speed Hand Blender. I've been wanting a hand blender for years because I hate transferring hot liquids to my food processor or blender then transferring them back to the pot whenever I need something blended.

How cool is this carrying case?
This is no ordinary hand blender though.  This bad boy has an 8 inch blending arm which can go into deep pots and blend without me having to worry about burning my hand.  The blades are so easy to switch out and don't require any tools.  The S-blade works great for blending, the multi-purpose blade crushes ice and the frother/beater blade froths milk and smoothies. If that wasn't enough there's also a whisk and a chopper attachment!  Plus it all comes in a great storage case that makes it easy to put away. My favorite part of the whole set is the pot guard.  It snaps on easily and protects my pots from the blades.  I love it!

As soon as I received the hand blender I opened it up and couldn't wait to make dinner.  It was a little too warm outside to make soup but it was cool enough to make homemade pasta sauce.  I am not a fan of chunky sauces so I wanted to use the hand blender to smooth it out.   The sauce consisted of tomatoes, tomatillos, garlic, peppers, and seasonings.  The pasta dish was a baked pasta with roasted vegetables.

I heated up the sauce ingredients and simmered them for 30 minutes.  Once the flavors were melding together I placed the hand blender with the S-blade into the sauce and blended for a few minutes.  The guard kept my pan from getting damaged and the blade worked its magic.  The sauce turned a lighter orange color from the green tomatillos and the red tomatoes and it smoothed right out.  The hand blender worked like a champ and was fairly quiet as well.

Rotini with tomatillo sauce and roasted vegetables
I roasted up some vegetables with olive oil, salt, pepper, and garlic.  Then I layered everything in a pan with a few cheeses and baked it up.  I ended up with a delicious baked pasta layered with gooey cheese, flavorful roasted vegetables, and a tangy, smooth tomato sauce.

Baked Rotini with Tomatillo Tomato Sauce (a Hezzi-D original)
1 onion, chopped
1 head broccoli, cut into florets
1 acorn squash, peeled, seeded, and diced
1 large tomato, cored and chopped
10 tomatillos, halved
2 medium green peppers, diced
1 t. salt
1 t. pepper
1 1/2 t. Italian seasoning
1 T. olive oil
3 garlic cloves

For the sauce:
10 tomatillos, halved
6 large tomatoes, cored, and cut into quarters
5 garlic cloves, minced
1 T. oregano
2 t. sugar
6 oz. tomato paste
1/2 onion, chopped
1/2 green pepper, diced
1 T. lemon juice
1/2 c. pasta water

For the pasta:
12 oz. rotini
1 c. ricotta (part skim is fine)
1 c. mozzarella cheese
1/4 c. Parmesan cheese

1.  Preheat the oven to 400 degrees.  Place the vegetables, salt, pepper, and olive oil on a baking sheet.  Bake for 15 minutes.  Remove from oven, add the garlic, and toss to combine.  Return to the oven for 15-20 minutes or until the vegetables begin to blacken.

2.  Place all of the sauce ingredients except for the pasta water in a medium sauce pan.  Bring to a boil then lower heat to a simmer.  Simmer for 30 minutes.

3.  Put the S-blade on a Kitchen-Aid hand blender and place the blender in the sauce pan.  Blend until smooth.  Heat for an additional 5 minutes.

4.  Cook the pasta according to the package directions.  Drain, reserving 1/2 cup of pasta water.  Keep pasta warm.

5.  Add the pasta water a tablespoon at a time to the tomato sauce, stirring after each addition, until desired consistency is reached.

6.  Pour the sauce, ricotta, roasted vegetables and pasta in a 9 x 13 baking dish.  Mix to combine.

7.  Sprinkle the pasta with mozzarella and Parmesan cheese.  Bake for 20 minutes or until cheese has melted.

I received the Kitchen-Aid blender from the company but all opinions and photos are my own.

Italian Sausage and Pepper Soup in Just 30 Minutes

Can you really ever have enough soup? I think not. I am not big on whimpy soups. I like hearty flavorful, 'beefy' soups. The kind of soups that stick to your ribs that you can walk away from the table without needing to eat a whole loaf of bread too and really feel satisfied.

Italian-Style Tomato Sauce #SundaySupper

This past weekend was a good one.  I had a three day weekend so my husband and I went up to my parents for the day and enjoyed spending time with my family.  My cousins, brother, aunt, and uncle were all there as well and we had a fun time.  My mom made dinner and we had make your own sundaes for desserts.  I love going to visit but I usually pretty tired by the time we drive back home in the evening.

Italian-style tomato sauce from Hezzi-D's Books and Cooks

The next morning I planned on canning some tomatoes but I couldn't get moving.  When I finally got up and dressed it was so hot and humid there was no way I could can.  We don't have air conditioning and I was hot without turning the stove on.  So I waited until mid-afternoon and then got started.  I had a ton of tomatoes to use so I made a batch of salsa then turned to make tomato sauce.

Last year I made roasted garlic tomato sauce which we enjoyed all winter long.  This year I tried the Italian tomato sauce.  I liked that it was packed with vegetables like carrots, celery, and onion.  While there wasn't any Italian seasoning in the original recipe, I added some in and it really made this sauce delicious.  I can't wait to enjoy it over pasta this winter!

This week the Sunday Supper team is sharing all of our favorite sauces in a theme we like to call "Sauce It Up!"  When I took a look at this list I was amazed by the creativity of our group.  Make sure you stop by and visit all the wonderful sauces this week.

Italian-Style Tomato Sauce (slightly adapted from Ball Complete Book of Home Preserving)
8 c. tomatoes, peeled and cored then pureed
2/3 c. chopped onion
2/3 c. chopped carrot
2/3 c. chopped celery
6 garlic cloves, minced
4 T. lemon juice
2 t. salt
1 t. black pepper
1 T. Italian seasonings
1/2 t. hot pepper flakes

1.  Prepare a boiling water canner, jars, and lids.

2.  In a large saucepan combine all the ingredients.  Bring to a boil over medium-high heat, stirring constantly.  Reduce the heat to low and boil gently, stirring frequently, for 15 minutes.

3.  Ladle the hot tomato sauce into hot pint jars.  Leave 1/2 inch of headspace.  Remove the air bubbles and adjust the headspace.  Wipe the rim and place the lid on the jar.  Place the screwband on and tighten to fingertip tight.

4.  Put the jars in the canner, making sure they are completely covered by water, and cover with a lid.  Boil in the canner for 20 minutes.

5.  Remove from heat and remove the lid.  Let sit for 5 minutes.  Remove the tomato sauce from the canner and let them cool for 24 hours.  Check the seals and then store for up to 1 year.

**Makes 5 pints**

Hearty and delicious tomato sauce canned to enjoy all winter long.

Skillet Lasagna

Easy Skillet Lasagna from Hezzi-D's Books and Cooks     While I absolutely love lasagna, sometimes it's too much of a pain to make it.  There's just too many steps and layering everything in the pan takes forever, not to mention it then has to cook for an hour.  So when I saw this recipe for skillet lasagna on Josie's blog I couldn't wait to try it.

I liked the ease with which this dish is made.  The beef and veggies are heated in the pan then the pasta is sprinkled on top, followed by the tomatoes and sauce.  Cook for 20 minutes and it was a delicious and faster lasagna!  I'll definitely be making this in the future when I'm having a lasagna craving but don't have the time for the original.  It was packed with flavor and really tasty!

Skillet Lasagna (adapted from Pink Parsley)
1 (15 oz) can diced tomatoes
4 c. Roasted tomato sauce (or other homemade sauce)
1 T. olive oil
1 medium onion, diced
1 t. salt
1 t. black pepper
4 garlic cloves, minced
1 t. Italian seasonings
1 lb. lean ground beef
8 lasagna noodles (I used Dreamfields Pasta), broken into 2 inch pieces
3/4 c. mozzarella cheese, shredded
1/2 c. Parmesan cheese, grated
3/4 c. part skim ricotta cheese

1.  Heat the oil in a large skillet over medium heat.  Add in the onion and cook for 5-7 minutes.  Stir in the garlic, salt, pepper, and Italian seasonings and cook for 30 seconds.

2.  Add the ground beef to the skillet.  Cook, stirring often to break up the meat, until it is cooked through.

3.  Scatter the pasta on top of the meat and then pour the tomatoes and sauce on top of the noodles.  Stir, increasing the heat to medium-high, and cover.

4.  Cook at a simmer, stirring every few minutes, until the pasta is tender.  This will take about 20 minutes.

5.  Stir half of the mozzarella and parmesan cheeses into the lasagna.  Dot the ricotta cheese over the noodles in spoonfuls, then sprinkle with remaining mozzarella and parmesan.  Cover and allow the cheese to melt for 2-3 minutes.

6.  Remove the cover, sprinkle with parsley if desired, and serve.

Italian Herb Sautéed Chicken {A Quick Dinner Idea with Land O’Lakes Sauté Express®} #SauteExpress

I am a member of the Collective Bias®  Social Fabric® Community.  This shop has been compensated as part of a social shopper insights study for Collective Bias and their client.

I work all day as a special education teacher and when I come home in the evenings I'm tired.  I don't want to spend a lot of time cooking so I look for quick dinner recipes during the week.  Chicken is my favorite meat so I'm always finding and creating easy chicken recipes to make after work.  One of my secrets to making a quick dinner is to get help by using a recipe starter.

Chicken breasts sauteed with Italian Herb Land O' Lakes Saute Express served over top of fettuccine.
I recently came across LandO’Lakes Sauté Express® Sautéed Starters at my local Wal-Mart store.   I bought the Italian Herb and the Lemon Pepper.  I used the Lemon Pepper last week to make quick fish tacos and they were quite tasty and easy to make.  I was saving the Italian Herb Sauté Starter for a night that I needed a quick dinner recipe.

Last night was the night I needed help in the kitchen!   I had an extremely busy day without any planning time and my husband had worked outside all day so he was tired as well.  I look in the refrigerator and saw the LandO’Lakes Sauté Express® Sautéed Starter and a package of chicken defrosting.  I had already planned on cooking the chicken with the Italian Herb Sautéed Starter and serving it over fettuccine noodles.

Then I looked out the window and saw quite a few cherry tomatoes begging to be picked.  I ran right out, grabbed a large handful and came back in.  I sautéed the chicken in the Italian Herb, added a handful of slice cherry tomatoes and a bunch of fresh spinach.  The meal took me about 20 minutes to prepared and tasted amazing!  The chicken had a beautiful deep brown color and the red and green from the vegetables really made it something something.

I placed the chicken and vegetables on top of hot fettuccine noodles for a complete dinner entree.  My husband liked how light the sauce was on top of the noodles and the butter and herb flavor of the chicken.  I enjoyed how quick this recipe cooked up and the explosion of flavor in my mouth.

Italian Herb Sautéed Chicken over Fettuccine  (a Hezzi-D original)
2  Land O’Lakes Sauté Express® Italian Herb cubes
1 lb. boneless, skinless chicken breasts
12 oz. fettuccine noodles
2 shallots, thinly sliced
1 c. cherry tomatoes, cut in half
1 c. fresh spinach
1/2 t. black pepper
1 T. balsamic vingegar
Fresh basil leaves

1.  Heat water in a large saucepan to boiling and then cook the fettuccine according to the package directions.  Drain and keep hot.

2.  Place the Land O’Lakes Sauté Express® Italian Herb cubes in a large skillet and heat over medium heat.  Once the cubes have melted add in the chicken breasts.  Sauté for 10-15 minutes, turning occasionally, until the chicken is cooked to 165 degrees.

3.  Add the shallots to the skillet and cook for 2-3 minutes or until they are covered in the sauce and become fragrant.  Stir in the cherry tomatoes and cook for 3 minutes or until they begin to soften.

4.  Add in the spinach and heat until the spinach just begins to wilt.  Sprinkle with black pepper and remove from heat.

5.  To serve place a 3 ounce portion of fettuccine on a dinner plate.  Top with a chicken breast and some of the Italian Herb sauce along with tomatoes and spinach.  Drizzle with balsamic vinegar and top with a few fresh basil leaves.  Serve hot.

Italian Herb Baked Meatballs

We are absolutely thrilled to be partnering with Lone Mountain Wagyu. If you have never heard of Wagyu, hold onto your socks, we will get back to that in a moment.

If you know anything about me, you probably are aware of my frugal nature. I am always looking for the best deal. I watch sale prices so I get the most BANG for my buck on groceries and even clip the sale coupons before shopping at my favorite department store.

Although, my mother always said "you get what you pay for" and she was so right. As of late I have spent a lot of time talking about beef. Chad and I have been discussing buying natural grass fed beef, for so many reasons.
