Tuesdays At The Table - Raspberry Scones

This may not be a popular opinion...but I'm so glad that summer is drawing to a close.  Honestly, it's my least favorite season.  I really dislike being hot and when it's humid, I can't breathe - darn asthma!

I'm so relieved that fall is coming.  With it comes a lower electricity bill (turning off the AC is nice!), sweaters, pretty foliage and finally a kitchen that cool enough to cook in!

Raspberry Scones

1 3/4 cup flour
3 tablespoons sugar
2 1/2 teaspoons Baking powder
1/2 teaspoon salt
1/3 cup butter
1 egg, beaten
1/2 teaspoon vanilla extract
1/2 cup whole milk
3/4 cup frozen raspberries (or blueberries, blackberries)
3/4 cup white chocolate chips

In large bowl combine the sugar, flour, baking powder and salt. Cut in the butter.  Stir in the berries and chips.

In a small bowl, combine your beaten egg, vanilla extract and whole milk. Add your wet ingredients to your dry ingredients and stir until the dough comes together.

Pat into a circle, about 8 inches wide and 2 inches thick.  Cut into wedges and place on a greased baking sheet.

Bake at 400 degrees for 18-22 minutes.

September Book Club Announcement

Happy Fall, everyone!  I know it's still technically Summer...but Labor Day means the end of the season to me. 

Call me an optimist, but as the weather cools, I hope more of you will warm up to curling up on the couch with a good book.  Specifically (ahem...optimism) the book club that Mrs. Jones and I are hosting.

Cherry Cream Cheese Blondies

Cherry Cream Cheese Blondies

My kids are very, very fond of a good Blondie and we have made several versions including a version with glace candied cherries. Since we had some ripe fresh cherries on hand, which the kids also love, I decided to try them in a new variation that also includes more chopped cherries in a luscious cream cheese frosting for a very pretty finishing touch. We froze some of these quite successfully too, so no doubt these awesomely delicious blondies will be making it to my Christmas freezer list this year as well.

Sift together
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda

Melt over low heat

  • 3/4 cup butter

Stir in

  • 2 cups packed brown sugar
  • 2 eggs
  • 3 tsp vanilla extract

Stir until the sugar is dissolved. Pinch the mixture between your fingers to make sure that you cannot feel any sugar granules.

Gradually mix in dry ingredients. Fold in:
  • 1 cup chopped fresh cherries (cut in quarters)
Spread the batter into a greased or parchment lined 9x9 baking pan.

Bake for about 35-40 minutes at 350 degrees F (325 F for glass bakeware) or until a wooden toothpick inserted into the center comes out clean. Cool completely before frosting.

Cream Cheese Frosting
  • 1/4 cup cream cheese
  • 1/4 cup butter
  • 1 tsp vanilla extract
  • 2 1/2 to 3 cups icing sugar (powdered sugar)
  • 1 tbsp milk; only enough to bring the frosting to a spreadable consistency.

Mix all the ingredients together and beat very well until smooth and fluffy. Add the milk last to get the frosting to the right consistency. Finally fold in:
  • 1/3 cup chopped fresh cherries
Spread evenly on top of the cooled blondies before cutting into squares or bars.

Jalapeño double chocolate chip cookies

I know I've mentioned this countless times before, but I am really loving being part of a CSA. I get to support our local farms and eat fresh produce. It's also a bit of surprise to see what produce and other items are included in my biweekly box. This forces me to make dishes that I normally would not have even thought about before.

One week, we received a bunch of jalapeños (although they might be hatch chiles - I don't quite remember). While I am starting to appreciate spicy foods more, I am pretty inexperienced when cooking with hot peppers. I was pretty dumbfounded when I saw all the peppers in the box and wasn't quite sure what to do. Should I give them away? Pretend they weren't there? Or even--gasp--throw them away?  No, no, and no.  I wanted to challenge myself and make something with them.

I decided to do a little searching online and came across these jalapeño double chocolate chip cookies. I liked the idea of infusing the margarine (or in my case, butter) in the jalapeño and then discarding the pepper completely. I'm usually not a fan of taking a bite into chunks of pepper, so the idea of simply creating a jalapeño margarine sounded more up my alley.

Man - these were unexpectedly good! My husband said that he didn't think the cookies would have too much heat, but they provided more spice than he expected - in a good way, of course.  When you first bite into these, you won't taste the jalapeño, but after a few more bites and after you finish swallowing, you'll feel some heat linger around. It's a pretty neat feeling and taste.

Now I'm tempted to try some more sweet and spicy desserts!

Ingredients
  • 1 cup unsalted margarine(I used 2 sticks of unsalted butter)
  • 1 jalapeño
  • 1½ cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cup all-purpose flour
  • ⅔ cup cocoa powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 2 cup semisweet chocolate chips
  • ½ cup roasted pine nuts (optional - I did not add) 
Directions
Make ahead: Melt margarine in a small saucepan, add jalapeño split in half and simmer for 10 minutes. Strain to remove the jalapeño and seeds, cool and refrigerate until solid.

After the jalapeño margarine is cooled and ready to use, preheat oven to 350 degrees F .

Beat the jalapeño margarine, sugar, eggs and vanilla in a stand mixer (or use a hand mixer) until it is light and fluffy.

In a separate bowl, combine or sift the flour, cocoa, baking soda and salt. Slowly incorporate into the margarine mixture until it is well mixed.

Mix in the chocolate chips and pine nuts (if using).
 
Drop by rounded teaspoon on to ungreased cookie sheets.  I used my medium cookie scoop and placed them on my imitation Silpat. 

Bake for 8-10 minutes, until edges are lightly browned. Transfer to wire racks to cool.  If you don't want to bake the entire batch immediately, you can store in the unbaked dough in the freezer and bake at a later time.

Yield: The website claims you can get ~60 cookies, but I got 40 cookies by using a medium cookie scoop.

Mountain Range

Grilled Chicken Skewers
This weekend we went camping out in the Watagan Mountain Range, to try out a few new purchases of ours. The first was our new Jeep "Nancy," a fun 4WD soft top, which we were keen to try on a quick weekend away to see how much she holds. The second was our new camping stove (or range!) which we'd purchased at the camping show earlier this year but hadn't used it yet. Our previous camping cooking appliance was a fabulous "Fire and Ice" BBQ/Esky combo which served us so well for many years. Last year in Darwin whilst camping though, we experienced the convenience and compactness of the gas camping stoves and decided to upgrade. We got ourselves a fabulous Colemans 3 Burner range.
Veg, potatoes and patties (for the kids)

We are known for our gourmet camping menus and this one was no different. We started off with some honey soy chicken skewers. Normally on the BBQ it would take about 20 mins to warm up and then about 30 mins to cook chicken but these were cooked through in about 15 mins. Our main was sirloin steaks with veg stir fry and potatoes. Again the stove did a great job. We had the grill plate over half for the steaks and used a fry pan for the stir fry on one of the other burners. What a great dinner to christen the stove for many more excursions to come!
