Peanut Butter Crunch Cookies
Inspired by our recent Chocolate Chip Pecan Crunch Cookies , I decided to take the same idea of adding nuts and Rice Krispies cereal to our old family recipe for peanut butter cookies and the results were not disappointing. There is a very enjoyable contrast between the soft, slightly chewy cookie and the super crunch of the crispy cereal and roasted peanuts. Hmmm...wonder f I should dip them in chocolate next time?

Cream
  • ½ cup butter
  • ½ cup peanut butter
  • ½ cup white sugar
  • ½ cup brown sugar

Add

  • 1 egg
  • 1 tsp vanilla
  • Sift together:
  • 1 ¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
Add to creamed mixture and fold until dough forms. Fold in:

  • 1/2 cup Rice Krispies cereal
  • 1/2 cup roasted peanuts.

Make 1 1/2  inch balls and roll one half of the ball in an additional
  • 1/2 cup roasted peanuts

Place the dough balls, peanuts side up on a parchment lined baking sheet  2- 3 inches apart. Chill in the fridge for 20 minutes or so.

Bake 13-15  minutes until golden brown at the edges @ 350 degrees F. Do not over bake or cookies will be brittle.

Makes about 12 cafe -style large cookies or about 18 smaller cookies.
