These soft, almost cake-like cookies make a very welcome afternoon treat with a steaming cup of tea or tall glass of cold milk. They can easily be prepared in a few minutes and if you like, you can keep the wrapped dough in the fridge for 2 or 3 days so that you can bake them off fresh a few at a time.

Sift together and set aside:


1 1/4 cups flour
1 tsp baking powder

Makes about 1 1/2 dozen.

Cream together well:

1/2 cup butter
1/4 cup sugar

Add:

1 tsp vanilla extract
1 large egg
finely minced zest of 1/2 lemon ( more if you like)

Fold in the flour until a soft dough forms. Do not overwork the dough. Wrap the dough in plastic wrap and chill in the fridge for about a 1/2 hour.

Roll dough into about 1 inch balls and place them 2 inches apart on a parchment lined cookie sheet. Press them down with two fingers. Bake at 325 degrees F for 12 minutes or until they just start to turn golden brown at the bottom edges.

While still hot dust with powdered sugar. Transfer to a wire rack to cool completely.
