Cooking with Extreme Measures

I love to cook almost as much as I love to write. I don't always get to connect the two, but when I wrote Extreme Measures, my latest suspense novel, a cooking scene with the hero at the helm fit in nicely. Not only did showcasing Matt's cooking skills help move the story along, it helped provide the background of the characters without including an information dump. And since I love eggs and omelets, so did Matt and Erin. Now here's the bacon omelet that Matt made in Chapter Two. Hope you enjoy it as much as I do!
Bacon Omelet with Sautéed Mushrooms and Onions
4 eggs beaten lightly
3 slices of crisp bacon
Two tablespoons of milk (or cream)
A dash of Mrs. Dash
Half a cup of diced mushrooms
1/3 cup diced onions
Teaspoon of olive oil
In small skillet, combine olive oil and onions. Cook for approximately three minutes. Add mushrooms and cook until they brown. Time varies, but it's usually about another three minutes.
In a larger skillet, add eggs, milk, and a dash of Mrs. Dash and cook over medium heat until the edges of the omelet start to bubble. Sprinkle bacon in the center and, using a spatula, fold the mixture in half and slide to the center of the pan. Lightly brown the omelet on each side, pressing gently on the outer edges to seal the bacon in.
Slide the omelet onto a plate and top with the sauté mixture. Enjoy!
