Chocolate Kamut Granola |
Kamut? What's kamut? It is an ancient type of wheat grain that you can buy in flake form that makes a high protein alternative to oatmeal in this delicious granola. Of course you can always substitute large rolled oats if you cannot find it or, like me, you really do love oatmeal granola. This granola makes a great morning grab and go breakfast or a wholesome after school snack. Spouse also crushed some and added it to plain yogurt and that was pretty tasty too. We had some dried strawberries here at the time we made this batch so we threw those in for extra flavor and chewy texture but you can substitute any dried fruit. Any favorite nut would also make a good addition.
Melt together until the sugar is dissolved:
3/4 cup butter
1/3 cup brown sugar
3 tbsp honey
Add
1 tsp vanilla
Remove from heat and add:
3 1/2 kamut flakes
1/3 cup whole wheat flour
1/2 cup chocolate chips
1/2 cup chopped dried strawberries or other dried fruit (optional)
1/2 cup chopped nuts (optional)
Press into a parchment lined 9x9 inch baking pan and bake for 30 minutes at 350 degrees F. Let cool and cut into bars or break into pieces. Store in an airtight container.
