Low Fat Ranch Chicken Salad |
The dressing for this tasty chicken salad is a homemade version made from fat-free yogurt. Simple ingredients like garlic and dijon mustard that you probably already have in your fridge get added to the yogurt to create a fat free dressing which then gets tossed with some diced chicken breast, peppers and celery to create a delicious chicken salad. That chicken salad can make some fantastic sandwiches for lunch or as a the base for a terrific lunch or dinner salad. It certainly is an excellent way to use that leftover chicken from Sunday dinner.
Serves 4 - 6
- 3 -4 cups diced chicken
- 1/2 cup finely diced celery
- 1/2 cup finely diced bell peppers
Toss together with the dressing and use in sandwiches or on a tossed garden salad.
Ranch Dressing:- 1 cup low fat or fat-free yougurt
- 1 cloves garlic, very well minced
- 1 tbsp basil, very finely chopped
- 1 tbsp fresh dill, finely chopped
- 3 tbsp apple cider vinegar
- 1 tbsp Worcestershire Sauce
- 1 tbsp dijon mustard
- 1/2 tbsp honey
- pinch kosher salt
- 1/2 tsp freshly ground black pepper
- 3 tbsp minced green onion
