This week fresh green beans were on sale. They looked amazing and were such a deal that I had to get a big tub full. I made balsamic green beans with part of the beans but wanted to do something else with the rest. I've never roasted them in the oven before but I had heard they get crisp on the outside but are tender on the inside.
While looking for roasted green bean recipes I came across one for Parmesan roasted green beans. It sounded similar to a broccoli recipe I make only with green beans so I gave it a whirl. Winner, winner, chicken dinner! This recipe was great! The beans were crispy on the outside and the Parmesan was salty and crisp as well. The insides of the beans were delicate and tasty. It was such an easy side dish I'll be buying more green beans at the farmer's market this week to make it again.
Parmesan Roasted Green Beans (adapted from Budget Savvy Diva)
8 oz. fresh green beans
1-2 T. olive oil
2 garlic cloves, minced
1 t. sea salt
1 t. black pepper
3 T. Parmesan cheese
1. Preheat the oven to 400 degrees.
2. Cut the ends off the green beans and rinse them in cold water.
3. In a medium bowl combine the green beans, olive oil, garlic, sea salt, and black pepper. Spread the green beans out on a cookie sheet.
4. Sprinkle the beans with Parmesan cheese and bake for 15-20 minutes.
